Plum-Good Coffee Cake Recipe

4 eggs

1 teaspoon vanilla

1 cup all-purpose flour

1 teaspoon baking powder

1 / 2 teaspoon pumpkin pie

spice

1 1 / 2 cups diced fresh plums

(Approximately 8 oz)

In small mixer bowl at medium speed, beat butter and sugar until light and fluffy. Whisk eggs and vanilla until well blended. Pipes together flour, baking powder and spices. Add flour mixture and egg mixture. Beat on low speed until smooth. Fold in 3 / 4 cup of yolks. Pour in slightly greased 9-inch round cake pan or quiche pan. Top with the remaining plums.

Bake in preheated oven at 375 F until golden brown and top springs back when he gently touched with finger, about 30-35 minutes. Cool on wire rack. Dust with powdered sugar, if desired. Cut into pieces. Serve hot or cold.
